Not necessarily spicy.
Particularly, recipes. Share them. I'll start off with the kahlua-glazed baked catfish I made today!
4-5 small catfishes (cleaned and all that) 1/2 cup kahlua (I like Kahlua Especial) 1/4 cup black strap molasses 1/4 cup honey (I used avocado honey, but any honey should work) 1 tsp cinnamon (or a cinnamon stick, which is what I used) A bit of nutmeg A small amount of a light oil (I used sunflower, safflower oil should also work) A handful of fine ground cornmeal Preheat oven to 325 F
First off put your honey, kahlua, and molasses in a small pot and heat it over low/medium heat until it's thin, liquidy, and easily malleable. Add your cinnamon and nutmeg, lower the heat, let it simmer awhile. Three to four minutes is enough.
Oil a baking sheet. Oil it thoroughly (baked molasses is not fun to scrub) but not enough to drown your fish. Then sprinkle the sheet lightly with cornmeal.
Take your catfish and start be spooning a bit of the glaze inside each fish, then dip the whole fish to coat it. This will probably use about 2/3 to 3/4 of your glaze - if you need more, proportions are easy enough. 2 parts kahlua, 1 part honey, 1 part molasses.
Pour whatever remnants of glaze you have over the fish, bake it. It took mine about 65 minutes to be ready, but use your judgment. Don't burn it.

That one's closer to 70 minutes, actually, but anyway.
Here's how I did the coffee cake tonight. Real simple, pretty sure there's a million similar recipes out there. But this is mine.
2 c flour (sift before measuring) 2 tsp baking powder 1/2 tsp salt 2 tbsp cinnamon 1 tbsp vanilla 1/2 c sugar (I use brown sugar, any sugar should work though) 6 tbsp melted butter 1 beaten egg 1/2 c milk
Beat the egg, butter, and sugar together first. Add milk, vanilla, and cinnamon, beat a bit more. Add flower and mix it up into a proper batter. Grease a pan (8", 9" or 10") and pour in the batter. Bake at 375 F for about 25 minutes or until done (test with a fork, for the clueless of you).
Buttercream or cream cheese icing goes awesome with it. I can post recipes for those too if anyone wants.

Alright so here's how to do the Italian buttercream I made to go with it last night.
3/4 c sugar AND 1/4 c sugar (separate) 1/4 c water 4 large egg whites (room temperature) 12 oz unsalted butter (cut into pats) 1 tsp vanilla [optional] 2 oz coffee, chocolate syrup, or etc ~ strong flavors work best. It's also good just as it is.
Add the water to the 3/4 c of sugar in a small pot; stir to wet the sugar and bring it to a boil on low-medium heat. Boil it until the temperature reaches 248 F.
Whip the egg whites in a separate bowl until soft peaks form. Add the 1/4 c sugar and vanilla and continue whipping until stiff peaks form.
When your syrup is ready (at 248 F) continue whipping egg whites and slowly whip in syrup, continue to whip until it cools (this will take 10-12 minutes), try to avoid getting syrup on the sides of the bowl since it will clump up.
Once the egg whites and syrup are thoroughly whipped and cool add in the butter and any flavoring (coffee and chocolate work very well) and whip until butter is fully incorporated and frosting is very smooth.

Lol, you're fancy. I just cook by dragging out whatever I happen to have in my pantry/fridge and stick it in a pot. Sometimes it's good, sometimes it's really, really terrible. Canned jalapeno pinto beans and eggs is... not something I'll be eating again. Ever.
I raided my fridge and tonight I'm having fake meat fried rice. \o/

::high5 Mecha:: If I can't nuke it, I skip it for something else I can stick in the microwave. That's ok, though, I'm just going to make Amarynth fix these lovely looking recipes for me.

Xochipilli's Fantastopotamus Maximus Lentil-Split Pea Stew2 cups lentils (dry) 1 cup yellow split peas (dry) 1 cup green split peas (dry) Sort then soak these all for six hours before starting. Once they're soaked, cook them in a large pot for about 30 minutes in 3 cups of vegetable broth (make your own, buy a few bouillon cubes, whatever - it all turns out about the same). Throw in two or three bay leaves as well. After that either... (preferable) transfer them to a slow-cooking crock pot and heat them. Turn the heat down VERY low.
Periodically spice it with salt, pepper, and anything else you like. I like adding two cloves of garlic, a bit of ground ginger and a tiny bit of cinnamon, but that's a personal taste.
Chop about four cups worth of roots and vegetables. Potatoes, carrots, celery, onions, taro root (if you use taro, soak it while soaking your lentils), cassava, and shallots all work very well. And taste fantastic. Boil them (all together) for 2-3 minutes before adding them to your stew.
From this point it's a matter of periodically stirring and spicing over the course of an hour - the lentils and split peas will continue to expand and absorb your broth, as will the vegetables. After about an hour, they'll all be very flavorful and delightful.
If you want dumplings, make a batch of dough for baking powder drop biscuits (I can post a recipe by request). Drop in 2-tbsp sized balls. Dumplings may take as much as 90 minutes to cook in a crock pot, but it's well worth the extra wait.

Rand beat me to it.Just so you know the first part I had no intention in making Ama fix me dinner. She should be writing a book that makes us rich instead ;D I always wished I could cook well though. You need to come to my house and cook for me Xoc.
