I'm a fan of yellow curry, myself.
I did a yellow coconut curry last week. Simplest thing in the world but damn is it good.

I've had bad luck with Curry; so i usually just spice things up with lots of hot thai ground red pepper.

Curry's easy. It'll be bitter if you overdo it, but that can be solved with a little extra coconut milk.
Or almond milk, for the adventurous.
Lately I've been using serrano peppers in a lot of things. I fried up hush puppies with serrano and candied jalapeno not long ago, turned out awesome.

Cooking is actually kind of a side pursuit for me. It gets me out of paying rent on occasion. I'm actually a major in theater with a minor in cinema studies.
Back on the topic of spicy food, I'm currently experimenting with roasting almonds in honey and cayenne pepper. I'll let you all know how it turns out in about forty minutes.

I admit I was never a fan of Cajun food. Blackened everything with too much pepper. There's also the part where I'm mostly vegetarian and most of the 'everything' that they blacken is meat, but...
To me Cajun food even ruins okra and catfish somehow.
Anyway, as for the almonds. Couldn't be easier to make.
Take two cups of (unsalted) almonds or so. 2/3 cup of honey, I did two teaspoons of ground cayenne but more or less depending on how spicy. Mix it all up in a bowl, very lightly grease a baking sheet, bake for about 20 minutes at 400.
Oh, and let it cool off before you try eating it. My roommate didn't. Burned himself badly.
Serves him right.

You know, I've made curry chicken at least a hundred times and never tasted it.
I cook for friends and family often, but they're all much more carnivorous than me...
I need to make tamales again. Green chili tamales.

I've never had curry and have really have no desire to try it >.> I do love hot peppers, though. I put jalapeƱos on everything :3
